Vegan Buddha Bowl


Ingredients:


* 1 cup cooked quinoa

* 1 cup roasted chickpeas

* 1 cup chopped broccoli florets

* 1/2 cup chopped red onion

* 1/4 cup chopped fresh cilantro

* 1/4 cup chopped fresh parsley

* 1/4 cup tahini dressing (recipe below)


Tahini Dressing:


* 1/4 cup tahini

* 1/4 cup water

* 2 tablespoons lemon juice

* 1 tablespoon olive oil

* 1 teaspoon maple syrup

* 1/2 teaspoon salt

* 1/4 teaspoon black pepper


Instructions:


1. Cook quinoa according to package directions.

2. Roast chickpeas at 400°F for 20 minutes, tossing halfway through.

3. Steam broccoli until tender-crisp.

4. Whisk together all tahini dressing ingredients until smooth.

5. Assemble Buddha bowls by layering quinoa, chickpeas, broccoli, red onion, cilantro, and parsley. Drizzle with tahini dressing.
