Spicy Mango Pickle
Yields: 4 cups

Cook time: 15 minutes
Ingredients:
* 2 pounds ripe mangoes, peeled and sliced
* 1 cup white vinegar
* 1/2 cup water
* 1/4 cup sugar
* 1/4 cup salt
* 2 tablespoons mustard seeds
* 1 tablespoon cumin seeds
* 1 tablespoon turmeric powder
* 1 teaspoon red pepper flakes (adjust to your spice preference)
* 1 teaspoon black peppercorns
* 1/2 teaspoon fenugreek seeds (optional)
* 1/4 teaspoon asafoetida (optional)
Instructions:
1. Prepare the mangoes: Peel and slice the mangoes into thin pieces.
2. Make the brine: In a large saucepan, combine the vinegar, water, sugar, and salt. Bring to a boil over medium heat, stirring until the sugar and salt dissolve.
3. Spice blend: In a small skillet, heat the mustard seeds, cumin seeds, turmeric powder, red pepper flakes, black peppercorns, fenugreek seeds (if using), and asafoetida (if using) over medium heat for about 1 minute, or until fragrant.
4. Combine: Add the spiced mixture to the boiling brine. Reduce the heat to low and simmer for 5 minutes.
5. Add mangoes: Add the sliced mangoes to the brine and simmer for 10-15 minutes, or until the mangoes are slightly softened.
6. Cool and store: Remove the pan from heat and let the pickle cool completely. Once cool, transfer the pickle to sterilized jars and store in the refrigerator for at least 2 weeks before serving.
Tips:
* For a milder pickle, reduce the amount of red pepper flakes.
* To make a sweeter pickle, increase the amount of sugar.
* You can use other spices like ginger, garlic, or chili powder to add more flavor.
* This pickle is best served with rice, roti, or as a side dish.
