Spicy Black Bean Burgers with Avocado Cream
These flavorful and satisfying black bean burgers are a delicious vegetarian option for dinner. The creamy avocado topping adds a touch of richness and freshness, while the spicy kick will leave you wanting more.
Ingredients:
For the Burgers:
* 1 (15 ounce) can black beans, rinsed and drained
* 1/2 cup cooked quinoa
* 1/4 cup chopped red onion
* 1/4 cup chopped cilantro
* 1 tablespoon chili powder
* 1 teaspoon cumin
* 1/2 teaspoon smoked paprika
* 1/4 teaspoon cayenne pepper (adjust to your spice preference)
* 1/4 cup breadcrumbs
* 1 egg, lightly beaten
* Salt and pepper to taste
For the Avocado Cream:
* 1 ripe avocado, mashed
* 1 tablespoon lime juice
* 1/4 teaspoon salt
* 1/8 teaspoon black pepper
To Serve:
* 4 burger buns
* Lettuce leaves
* Sliced tomato
* Your favorite toppings (optional)
Instructions:
1. In a large bowl, combine the black beans, quinoa, red onion, cilantro, chili powder, cumin, paprika, cayenne pepper, breadcrumbs, egg, salt, and pepper. Mash with a fork until well combined.
2. Form the mixture into 4 patties.
3. Heat a large skillet over medium heat. Add a little oil to the skillet and cook the patties for 5-7 minutes per side, or until golden brown and cooked through.
4. While the patties are cooking, prepare the avocado cream by combining the mashed avocado, lime juice, salt, and pepper.
5. To assemble the burgers, spread avocado cream on the bottom buns. Top with the black bean patties, lettuce, tomato, and any other desired toppings. Serve immediately.
