easy dinner recipe: One-Pan Lemon Herb Chicken and Veggies
Ingredients:
* 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
* 1 tablespoon olive oil
* 1/2 cup chopped onion
* 1 cup chopped broccoli florets
* 1 cup chopped carrots
* 1/2 cup chopped red bell pepper
* 1/4 cup chopped fresh parsley
* 2 tablespoons lemon juice
* 1 teaspoon dried oregano
* Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, combine chicken, olive oil, onion, broccoli, carrots, red bell pepper, parsley, lemon juice, oregano, salt, and pepper. Toss to coat.
3. Spread the chicken and vegetables in a single layer on a baking sheet.
