One-Pan Lemon Herb Chicken and Roasted Vegetables
This simple and flavorful one-pan recipe is perfect for a weeknight dinner. It's easy to prepare and packed with flavor, making it a crowd-pleaser.
Ingredients:
* 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
* 1 tablespoon olive oil
* 1 teaspoon dried oregano
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1 cup chopped broccoli florets
* 1 cup chopped carrots
* 1/2 cup chopped red onion
* 1/4 cup lemon juice
* 2 tablespoons chopped fresh parsley
Instructions
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, combine the chicken, olive oil, oregano, thyme, salt, and pepper. Toss to coat.
3. Spread the chicken in a single layer in a large baking dish.
