Honey-Glazed Carrots with Toasted Almonds


Ingredients:


* 1 pound carrots, peeled and sliced

* 2 tablespoons olive oil

* 1/4 cup honey

* 1 tablespoon Dijon mustard

* 1/4 teaspoon salt

* 1/4 teaspoon black pepper

* 1/4 cup sliced almonds


Instructions:


1. Preheat oven to 400 degrees F (200 degrees C).

2. In a large bowl, toss carrots with olive oil, honey, Dijon mustard, salt, and pepper.

3. Spread carrots in a single layer on a baking sheet.

4. Roast in preheated oven for 20-25 minutes, or until tender and slightly caramelized.

5. Sprinkle with toasted almonds and serve immediately.
