Honey Garlic Glazed Chicken with Roasted Vegetables
Ingredients:
* 4 boneless, skinless chicken breasts
* 1 tablespoon olive oil
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 cup honey
* 2 tablespoons soy sauce
* 1 tablespoon rice vinegar
* 1 clove garlic, minced
* 1/2 teaspoon grated ginger
* 1 cup broccoli florets
* 1 cup carrots, sliced
* 1/2 cup red onion, chopped
Instructions:
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a small bowl, whisk together honey, soy sauce, rice vinegar, garlic, and ginger.
3. In a large bowl, toss chicken breasts with olive oil, salt, and pepper.
4. Place chicken breasts in a baking dish. Pour honey garlic glaze over chicken.
5. In a separate bowl, toss broccoli, carrots, and red onion with olive oil, salt, and pepper.
6. Arrange vegetables around chicken in baking dish.
7. Bake in preheated oven for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
