burrito recipe
Ingredients:
* 1 tablespoon olive oil
* 1/2 cup chopped onion
* 1/2 cup chopped green bell pepper
* 1/2 cup chopped red bell pepper
* 1/2 cup chopped mushrooms
* 1/2 cup chopped spinach
* 1/2 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
* 4 eggs
* 1/4 cup milk
* Salt and pepper to taste
* 4 large flour tortillas
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion, green bell pepper, red bell pepper, and mushrooms. Cook for 5-7 minutes, or until softened.
2. Add the spinach and cook for 1-2 minutes, or until wilted.
3. In a separate bowl, whisk together the eggs, milk, salt, and pepper.
4. Pour the egg mixture into the skillet with the vegetables. Cook, stirring occasionally, until the eggs are set.
5. Sprinkle the cheese over the eggs and vegetables. Let it melt for a few minutes.
6. Warm the tortillas in a microwave or skillet.
7. Divide the egg mixture among the tortillas. Fold the tortillas in half or roll them up.
8. Serve immediately.
You can add other ingredients to your breakfast burritos, such as beans, salsa, sour cream, or avocado.
