Beef Breakfast Burrito Bowl 


Yields: 1 serving

Prep time: 10 minutes

Cook time: 15 minutes 


Ingredients:


* 1 tablespoon olive oil

* 1/2 pound ground beef

* 1/2 cup chopped onion

* 1/2 cup chopped bell pepper (any color)

* 1 teaspoon chili powder

* 1/2 teaspoon cumin

* 1/4 teaspoon salt

* 1/4 teaspoon black pepper

* 1/2 cup cooked rice

* 1/2 cup black beans, rinsed and drained

* 1/4 cup salsa

* 1/4 cup shredded cheddar cheese

* 1 tablespoon chopped cilantro

* 1/4 avocado, diced

* Hot sauce, to taste


Instructions:


1. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned.

2. Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.

3. Stir in the chili powder, cumin, salt, and pepper. Cook for 1 minute more.

4. In a bowl, combine the rice, black beans, salsa, cheese, cilantro, avocado, and cooked beef mixture. 

5. Top with hot sauce, if desired.
