Mac & Cheese
*usually prepared for 4 servings
INGREDIENTS
large head of cauliflower - 1/4
olive oil - ½ tsp
heavy cream/vegan cream cheese - 1/4 cup
cheddar, shredded/vegetarian cheese- 1/2 cup
small jalapeno, diced - 1/4
garlic powder - ¼ tsp
onion powder - 1/8 tsp
salt - to taste
INSTRUCTION
1 Start by setting your oven to a high broil. Cut and divide the cauliflower into small floret chunks and bring them to a boil. Toss the florets with olive oil and transfer them to a baking sheet that has been lined with parchment paper.
2 Broil them until they are gently roasted and tender. It should take about 5-8 minutes. Meanwhile, make your cheese sauce by combining the heavy cream, onion powder, jalapeno, salt, and garlic powder in a saucepan.
3 Once the mixture has started to boil, add the cheese and stir until it's melted. Remove the saucepan from heat. Now take the baked florets and transfer them into a large bowl. Dress them with the hot cheese sauce and toss until all the florets are gently coated
