The Best Casserole Muffins

INGREDIENTS
red onion - 1/2
cheddar - 25 g
egg - 2
olive Oil - 1½ tbsp
broccoli - ½ cup
salt - ½ tsp
INSTRUCTION
1 Take out a saucepan and put on low-medium heat on the stove. Heat the oven to 350F or 176C
2 Finely chop the red onion and broccoli.
3 Put the vegetables in a pan with 1 tbsp of olive oil. Cook until slightly toasted, about 5 minutes.
4 Let the vegetables cool on the side.
5 Once cooled, mix in a bowl with the eggs, salt, and cheddar cheese.
6 Use the remaining 0.5 tbsp of olive oil to coat the muffin pan.
7 Pour the mixture into the muffin pan slots.
